It’s the freakin’ weekend, baby, and you know what that means- Chipotle week is coming to an end. I’m finishing out this culinary adventure with the finished product, (and the thing I’ve been eating for lunch every day this week) my Copycat Chipotle Burrito Bowl! I’ve basically been dying to share this final product with you since it came into existence last Sunday.
Behold, the combination of Copycat Chipotle Chicken and Marinade Recipe, Copycat Chipotle Pico de Gallo (Chipotle’s Mild Fresh Tomato Salsa), Copycat Chipotle Black Beans Recipe, Copycat Chipotle Guacamole Recipe, Copycat Chipotle Cilantro Lime White Rice, and Copycat Chipotle Corn Salsa (Medium) to make the perfect Copycat Chipotle Burrito Bowl!
I’m not going to lie, it did take some time to make all of this on Sunday, but man was it worth it. I got to eat all this yumminess in endless combinations this week: salads, rice bowls, tacos… and they all store so well in the fridge for lunches!
Also, Mexican food has this way of repeating ingredients a lot- you’ll notice everything has some core flavors, (onion, lime, cilantro, jalapeño) so you don’t end up having to buy 50 different ingredients.I hope you enjoyed Chipotle week as much as I did- and I hope you know these recipes are endlessly customizable! Arguably the best thing about Chipotle is the mix-and-match feeling of different combinations, so don’t worry, your tongue won’t get bored 😉
- ½ cup Cilantro-Lime white (or brown!) rice
- 4 oz chopped Chipotle marinaded chicken
- ¼ cup black beans
- ½ cup roasted chili-corn salsa
- ¼ cup pico de gallo
- 2 tablespoons guacamole
- ¼ cup shredded cheddar cheese
- 1 tablespoon sour cream
- ½ cup shredded lettuce
- Tortilla chips, for dipping
- Layer all ingredients in a bowl, (or taco shell) and dig in!
I know this is an older post, but I just made this meal tonight, and it was a WINNER! I didn’t have all the ingredients, but it still worked out well. 😀
