Hey everyone! As much as I love creating my own recipes and sharing them with you all, more often than not I’m whipping up delicious recipes from other bloggers. The one’s I’ve been making this week are just too good not to share! So here you are- the recipe links I’m loving this week:
Breakfast
Gimme Some Oven’s Carrot Cake Smoothie
I’m a morning smoothie girl through-and-through. Mostly because I hate eggs, and also because they are so good for quick and easy on-the-go mornings. I decided to make this carrot cake smoothie before work every day this week and I’m SO in love with it. Seriously, it tastes like dessert, it’s healthy, AND it fills me up until lunch, (which you can’t usually say for smoothies under 300 calories). Buy pre-shredded carrots at the grocery store to make this a breeze in the mornings.
I may hate eggs, but Taylor loves them. These recipes are for him this weekend 🙂
Damn Delicious’ Breakfast Stuffed Waffles
Even as an egg-hater, I have to admit these look good. Just imagine them dipped in maple syrup *drools*
Buzzfeed’s Tomato Avocado Omelet with Strawberries
Another one I’ll admit looks delicious, and super healthy!
Lunch
Pinch of Yum’s Summer Bliss Bowl with Sweet Potato Falafel and Jalapeño Ranch
This is what I’m currently munching on while I’m typing this. AMAZING. Quinoa and sweet potato “falafel”, but they’re more like veggie meatballs, with roasted corn, tomatoes, goat cheese, (I used honey goat cheese!) and homemade greek yogurt jalapeño ranch. MAKE THIS IMMEDIATELY.

Okay so I’m slightly obsessed with Pinch of Yum and all her different types of bowls. Trust me this won’t be the last one you see.
Real Simple’s Summer Vegetable Panini with Lemon Aioli and Mozzarella
My favorite way to use up all of those summer veggies before they go bad! This lemon aioli is to.die.for. Plus, what could be easier to bring to work then a sandwich?
Dinner
Half Baked Harvest’s Crockpot Carne Asada Beer Chili
This is one of those amazing dinners where I spend 5 minutes throwing all the ingredients into a gallon ziplock bag the night before, and then dump it in the crockpot before work. I made this yesterday, and when I pulled into my garage I could smell the crockpot while still in my car. Seriously, that good. Make a big batch of roasted corn to top this with, and to put in your summer bliss bowls for lunch! Also, I used Leinenkugel’s Harvest Patch Shandy as my beer, which gives the chili a sweet, pumpkin-y flavor. Yummmmmmo.
Pinch of Yum’s Bahn Mi Bowl with Lemongrass Meatballs
I told you I wasn’t finished with the Pinch of Yum bowls yet! This one I’m making for Taylor tomorrow, but subbing out 1-minute microwavable brown rice for quinoa. I don’t think he would know what to do with quinoa.
Half Baked Harvest’s Crockpot Healthy Butter Chicken and Naan
Another crockpot goodie because we’re all just too busy! This one is especially good if you make the homemade naan bread, (it’s much easier than it sounds!)
The Pioneer Woman’s Perfect Pot Roast
Ah, pot roast. Another easy dump and go crockpot dinner I make almost weekly. I like to make this one EVEN EASIER by quartering potatoes and throwing them in there too. Who’s got time to make mashed potatoes on a Tuesday at 7? Not this girl. I also get rid of one step, which is searing the meat first, because I actually think it dries the meat out. This is honestly 5 minutes MAXIMUM of effort.
Saturday & Sunday: Game Day Snacks
Sunday for me is the holy day of meal prepping. I spend my morning planning the week’s menu, creating my list, and going grocery shopping. I then spend all afternoon and evening making my breakfasts and lunches for the whole week, prepping dump-and-go crockpot dinners in big gallon ziplock bags, and then I put Sunday dinner on the table. I’m not a huge football fan. However, I’ve recently received a request from Taylor, who is a huge football fan, that, “Ally’s Cooking could use some football game day snack recipes….and I’d be happy to try them out while I’m watching the games”. Code for: “make me wings and spinach dip on Sunday’s please”. So, after having thoroughly neglected the Sunday snack universe of foods, I will be making these this weekend:

Because I’m in love with my slow cooker….obviously.
