Pioneer Woman's Blackberry Cobbler

Serves: 6-8 servings
- 1 stick butter
- 1 cup sugar, plus ¼ cup for sprinkling
- 1 cup self-rising flour
- 1 cup milk
- 2 cups, (about a pint) of fresh blackberries
- Vanilla ice cream, for serving
- Preheat your oven to 350F.
- Melt the butter in a microwavable dish.
- In a large mixing bow, pour in the 1 cup of sugar and 1 cup of self-rising flour.
- Whisk in the cup of milk, then whisk in the melted butter until a batter forms.
- Pour the batter into a baking dish, (mine was 8x10).
- Rinse and dry the blackberries, then sprinkle them evenly all over the batter.
- Sprinkle the extra ¼ cup of sugar over the top.
- Bake in the oven for an hour until golden and bubbly.
- Serve with vanilla ice cream!
