Pioneer Woman's Blackberry Cobbler

Serves: 6-8 servings
  • 1 stick butter
  • 1 cup sugar, plus ¼ cup for sprinkling
  • 1 cup self-rising flour
  • 1 cup milk
  • 2 cups, (about a pint) of fresh blackberries
  • Vanilla ice cream, for serving
  1. Preheat your oven to 350F.
  2. Melt the butter in a microwavable dish.
  3. In a large mixing bow, pour in the 1 cup of sugar and 1 cup of self-rising flour.
  4. Whisk in the cup of milk, then whisk in the melted butter until a batter forms.
  5. Pour the batter into a baking dish, (mine was 8x10).
  6. Rinse and dry the blackberries, then sprinkle them evenly all over the batter.
  7. Sprinkle the extra ¼ cup of sugar over the top.
  8. Bake in the oven for an hour until golden and bubbly.
  9. Serve with vanilla ice cream!
