Who can believe it’s December already?! It feels a little surreal to me that only 5 months ago I had this crazy idea to start blogging about the food I was cooking every night and people are actually reading it.  So much so that I have a clear top 10 list for you all! 10. Greek Pot Roast with Homemade Tzatziki
I think this was the first recipe I made where I took a picture and went WOAH that finally looks as good as it tastes. Maybe I CAN actually do this whole food blogging thing. And oh my gosh did it taste good.  The Greek seasoning recipe in here is just to die for, and is equally as mind-blowing on Greek Chicken Kabobs with Homemade Tzatziki.
9. Slow Cooker Tuscan Soup with Pork, Beans, and Kale
Okay this may not look like anything special but I remember fully moaning in pleasure with every bite I took. The slow cooker really works wonders on some flavor here, and this soup couldn’t have been easier to throw together.
8. Easy Crockpot Chicken Fajitas
I make a variation of this dish at least once a week because it’s one of those amazing dump-and-go crockpot meals that is so easy and customizable for a week night dinner. Â Totally crave-able, delicious, and a little spicy, especially wrapped in a warm tortilla and covered in cheese. Okay just writing about it makes me want some NOW.
7. Spicy Coconut Curry Noodles
Spicy, slurp-y, asian noodle bliss. Just make them already.
6. Slow Cooker Mashed Potatoes with Roasted Garlic
This post went absolutely gangbusters on Thanksgiving, and for good reason. This is hands down the easiest way to make perfect mashed potatoes every time. Good bless the crockpot.
5. No-Guilt Spaghetti Squash Bolognese
Halfway done with the list, and I promise this won’t be the last time you see spaghetti squash on here…This is the ultimate Italian comfort food with none of the guilt. I promise you won’t even miss the carbs.
4. Crockpot Banh Mi Brown Rice Bowls with Asian Slaw
One of my favorite easy work lunch meals to date! This meat was so tender a juicy, (also very delicious in tacos) and the slaw is tangy, spicy, addictive, and- dare I say- healthy.  My twist on the amazing bahn mi sandwiches at the Vietnamese restaurant down the street.
3. Creamy Crockpot Butternut Squash Apple Soup
Another crockpot wonder, this is seriously the best butternut soup I’ve ever tasted. So much flavor and spice, and if you have an immersion blender this whole meal is majorly easy.  Highly recommend some bread for dunking 😉
2. Simple Slow-Cooked Perfect Pot Roast
The epitome of comfort food, my pot roast is fancy enough for a Sunday supper, but easy enough for any ole’ week night.  I cut out any extra time and complication from this recipe to leave you with a stress-free, rustic meal waiting for you when you get home.

This recipe has gotten thousands of views since it was featured on Buzzfeed, and for good reason. This is cheesy, creamy, guilt-free heaven. And the addition of the lemon really brightens it up to make it feel less heavy. This is one of my favorite go-to spaghetti squash recipes, and if you haven’t tried spaghetti squash yet, this is sure to convert even the pickiest member of your family.
