Copycat recipe for Chipotle's guacamole

Serves: 2 cups
  • 2 ripe Haas avocados
  • ½ red onion, diced into ¼" pieces
  • 1 jalapeno, seeds and ribs removed, and diced
  • ¼ cup fresh cilantro, finely chopped
  • 1 lime, juiced
  • ½ lemon, juiced
  • ¼ tsp salt
  • pinch of black pepper
  1. Halve the avocado by cutting it long-ways around the pit, and twisting to pull the halves apart. Squeeze the side with the pit gently to remove. With a spoon, make criss-cross cuts in each half of the fruit to gently chop the avocado, and scoop the pieces out.
  2. Add all the ingredients to a medium bowl, and mash with clean hands to keep the guacamole chunky.
  3. To keep, press plastic wrap tight against the guacamole to prevent browning.
