Oven Baked Sweet Potato Fries with a Duo of Sauces

  • 2 sweet potatoes, peeled and cut into ¼" thick french fries
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. salt
  • freshly cracked black pepper

  • Sweet & Spicy Mayo:
  • 2 Tbsp. mayo
  • 2 Tbsp. ketchup
  • 1 Tbsp. hot sauce
  • .
  • Spicy Avocado Sauce:
  • 1 rice avocado, peeled and pitted
  • 1 jalapeno, (seeded and deveined if you don't like it too spicy, but I left mine whole)
  • Juice of 1 lime
  • 2 cloves of garlic, peeled
  • Pinch of salt
  • ½ - ¾ cup water, (add it in a little at a time until you reach your desired consistency)
  1. Preheat your oven to 400 degrees.
  2. Toss the sweet potato fries in olive oil, salt, and pepper until they are all coated, and then spread them out in a single, even layer on a rimmed baking sheet.
  3. Bake for 30-40 minutes depending on the thickness, turning once after 20 minutes. I like mine on the crispy, almost-burnt side, so I went for 40.
  4. For the Sweet & Spicy Mayo: stir all ingredients in a small bowl until combined.
  5. For the Spicy Avocado Sauce: combine all ingredients but water in a food processor or blender first, and then slowly add in water until the sauce is your desired consistency.
