Parmesan Garlic Roasted Potatoes

Serves: 2 servings
  • 2 russet potatoes or 4 yukon gold potatoes, peeled and diced into ½" cubes
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • ¼ cup grated parmesan cheese
  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with aluminum foil if desired.
  3. Toss all ingredients in a large bowl to coat potatoes evenly, and spread out the potatoes in an even layer on the baking sheet.
  4. Bake the potatoes for 45 minutes until crispy and cooked through.
