Slow Cooker Mashed Potatoes with Roasted Garlic

Serves: 6-8 servings
  • 3 lbs yukon gold potatoes, peeled and diced into 1" cubes
  • 1 tbsp salt
  • Freshly ground black pepper
  • ½ cup chicken broth
  • 4 garlic cloves, minced if raw, or whole if roasted
  • 1 stick of butter, sliced into thin tabs
  • ¼ cup milk or cream, to taste
  1. Peel and dice potatoes into 1" cubes. Place in the crockpot with ½ cup chicken broth, and season generously with salt and pepper.
  2. Sprinkle garlic and butter on top of the potatoes. Cover, and cook on "high" for 2-3 hours, or until potatoes are fork tender.
  3. Mash the potatoes with a hand masher or hand mixer, adding a splash of milk or cream one at a time until the potatoes are your desired consistency.
