I just got back from my annual girls’ weekend in Steamboat Springs, CO with my college friends. It’s always the best time, and this time was no exception. We skied, we tubed, we shopped, we sipped red wine by the fire, and we ate. Oh, we ate. Cheese fondue, barbecue, tacos, mac and cheese, sushi, EVERYTHING. When I got home Sunday night I knew it was time for a little detox. I was tired, and “salads, chicken, and veggies” is about all I could think of for meal prep, but you know what made all of that yummy and un-boring? Avocado Green Goddess Dressing.
Avocado green goddess dressing can seriously jazz up any ole meal prep bowl. Kale salad? Avo dressing. Chicken and veggies? Avo dressing. Turkey sandwich? Avo dressing.
I do believe the uses are endless, and when the recipe fits perfectly into a screw-top mason jar, why not? Let that jar hang out in the fridge for a few days and put this on anything ya got. Steak tacos? Yes ma’am.
As though my life couldn’t get any more fun, (lol) I experienced my first true sign of aging this morning: a pinched nerve. So here I am, bed-ridden and completely horizontal, writing this with my icy hot patch on my neck. I truly am a sight. But you know what? Having such an easy meal waiting for me in the fridge was an absolute BLESSING today, (not that I wouldn’t have no-shame ordered Door Dash and answered the door neck wrap and all).
- 1 avocado
- 1 cup water
- ½ cup mayonnaise, (paleo mayo works well here, too!)
- 4 cloves garlic
- 1 lemon, juiced
- 2 tsp. dijon mustard
- 1 tsp. salt
- freshly cracked black pepper
- ½ cup fresh basil leaves
- Add all ingredients to a food processor or blender. Purée at least 30 seconds, until smooth and creamy. If it's too watery, purée some more.
